Summertime Salad Shenanigans

This show stopping salad is the perfect side for the summertime pappardelle pasta! It’s deliciously bitter and acidic! Plus... it’s pretty!

Ingredients
16 oz of Arugula
1 peeled or shredded carrot
1 watermelon radish
6 sliced radishes
1 sliced cucumber
1 lemon for zest and juice
2 oz of goat cheese
2 cloves of minced garlic
1/4-1/2 cup of olive oil
1 tablespoon of red wine vinegar
1 tablespoon of Dijon mustard
1 tablespoon of honey
2 oz of Pecorino Romano
Directions
1. In a large bowl, add 1/4 cup of olive oil, red wine vinegar, mustard, 1 oz of Pecorino Romano, lemon zest, honey, and garlic. Whisk to combine. Add salt and pepper to taste. If you do not like acidic dressing, whisk in more olive oil to your specific taste.
2. Add arugula, carrot, and radish. Toss with tongs to combine.
3. Lay salad on a platter. Squeeze 1/2 of a lemon over greens. Sprinkle with remaining Pecorino Romano and fresh cracked pepper. Crumble goat cheese over top.
4. Mandoline or thinly slice watermelon radish. Arrange the watermelon radish and cucumber on the top of the salad.
